Profile and Tasting Notes
Unlike heavy, buttery California Chardonnays, this version focuses on pure fruit and refreshing minerality:
- Aromas: Intense tropical notes of guava, starfruit, lychee, night-blooming jasmine, and key lime.
- Palate: Juicy, zesty, and medium-bodied with a smooth, silky texture.
- Finish: A clean, lingering finish highlighted by honeydew melon, limestone dust, and a distinct touch of saline.
Production Details
- Composition: Blended with 85% Chardonnay and 15% Chenin Blanc to boost aromatic freshness and crispness.
- Appellation: Sourced from the Cosumnes River region in Lodi, California.
- Winemaking: Fermented entirely in 100% stainless steel and aged for 3 months sur lie (on the yeast sediment) to give it a creamy texture without using oak barrels.
- Alcohol Content: 13.5% ABV.
- Farming: Regeneratively farmed, certified sustainable, and completely vegan-friendly.
Serving and Pairing
Serve this wine chilled between 45–50°F. Its high acidity and lack of heavy oak make it exceptionally versatile for food pairings. It pairs excellently with seafood likes oyster and crab cakes, roast chicken, light pasta dishes, or rich sides like truffle fries and mac and cheese.
