Tasting this wine reveals a fresh and multifaceted bouquet, featuring fruity notes alongside balsamic and meaty undertones. In the mouth, it displays a remarkable vertical character, characterized by robust yet velvety and harmoniously integrated tannins, complemented by a pronounced salinity.
Prior to fermentation, a pre-fermentation cold maceration process is employed for approximately four days, followed by fermentation in controlled-temperature steel and natural cement tanks, maintaining temperatures below 26 degrees for a total duration of three weeks. Malolactic fermentation occurs in concrete tanks. The aging process encompasses roughly 30 months in oak barrels of varying capacities, including Slavonian and French oak (ranging from 10 to 50 hl). Bottling takes place during April and May, aligning with the most favorable lunar phases, followed by extended bottle aging. The wine boasts an alcohol content of 14% vol.
