History
Bollinger Champagne Brut Special Cuvee is an icon in Champagne, its reputation resting entirely on the quality of its extraordinarily distinct Champagnes. Very simply, Bollinger is the outlier. The rigorous, obsessive attention to detail and preservation of artisanal, almost absurdly labor-intensive practices make Bollinger both a guardian of the past and, as we see with each passing year, the beacon of the future. The Bollinger vineyards cover 405 acres, most classified as Grand or Premier cru, providing roughly two-thirds of the house’s needs. Decades ago, Bollinger wrote a quality charter stating their own vineyard must account for a minimum 60% of their production, reflecting their commitment to quality over quantity. As the only remaining producer in the region with its own cooperage, Bollinger maintains a stock of 3,000 oak barrels for fermenting its Non Vintage and Vintage wines. Their single cooper, an essential link to historical knowledge, does not create new barrels but spends time repairing many that are over 60 years old. All Vintage wines are 100% barrel fermented, both alcoholic and malolactic fermentation, a unique practice among major producers. Bollinger stores its reserve wines in magnum bottles for blending into Non Vintage cuvees, a labor-intensive process requiring a team of seven a full month to complete annually. Each Vintage wine is aged under cork rather than a crown capsule, necessitating hand-riddling and hand-disgorging. Furthermore, Bollinger's long-standing association with British secret agent James Bond adds to its allure, having been featured as Bond’s Champagne of choice in nearly every Bond movie since 1973.
