Maison Castarède, founded in 1832 in southwest France, is now run by sixth-generation Florence Castarède. This XO is made exclusively from Folle Blanche, a traditional grape that yields delicate, floral eaux-de-vie of great elegance. While the XO designation requires a minimum of 10 years in oak, Castarède over-delivers, aging its XO considerably longer for added depth and rancio character.
