Del Maguey Mezcal de Puebla is a special limited edition from San Pablo Ameyaltepec in the semi-tropical Puebla valley — made from 12 to 18-year-old Papalote (Agave cupreata) corazones, earth-pit roasted, open-air fermented with ambient yeasts, and distilled once through copper plates in a resaque (reflux) style alembic still, a production method specific to Puebla that produces a spirit unlike any other in the Del Maguey portfolio.
Maestro mezcalero Aurelio Gonzalez Tobon is responsible for this expression in Ameyaltepec — from where you can see north to smoke rising from the volcanoes Iztaccihuatl and Popocatepetl. Puebla has one of the oldest mezcal distilling traditions in Mexico but only recently received its Denominacion de Origen, allowing these spirits to be legally labeled mezcal. The reflux resaque still produces a different character than standard copper pot distillation — a single pass through copper plates at higher reflux creates an incredibly floral spirit, forward with spicy carnation and lilac balancing perfectly ripe tropical fruit, with crisp citrus, a creamy round texture, and a memorable mineral finish.
