Del Maguey Wild Jabali Mezcal Tequila

Del Maguey Wild Jabali is made from one of the most notoriously difficult wild agaves to work with — Jabali (Agave convallis), a plant that foams aggressively at every stage after roasting due to naturally occurring chemical compounds in the agave, requiring exceptional skill and patience from the palenquero, and producing a mezcal of bright acidity, high florals, and herbal complexity that rewards the effort.

The foaming of Jabali is a genuine production challenge — the chemical compounds that cause it are natural to the agave and cannot be removed without altering the spirit. The palenquero must manage the fermentation and distillation process carefully to work around the foaming at every stage. Del Maguey sources Jabali from the same producer responsible for Tobala, Tepextate, and Espadin Especial — a maestro whose experience with rare wild agaves is among the deepest in the Del Maguey network. The resulting mezcal has a vividly bright acidity, sweet violets on the palate, and herbal tarragon complexity that is completely distinct from any other expression in the portfolio.
