Flagship Don Maximiano is a meticulous blend of Cabernet Sauvignon, Carménère, Petit Verdot and Malbec from the estate's oldest vines. Grapes are handpicked, sorted and cold-soaked for enhanced extraction. Fermentation occurs in small, open fermenters with indigenous yeasts and daily punch-downs. The wine is matured 20 months in 100% new French oak, with rigorous rackings to refine tannins. After a full year in bottle at the winery, Don Maximiano emerges elegantly structured, with layers of dark fruit, graphite and tobacco leaf.
