Garrison Brothers Distillery, the first legal whiskey distillery in Texas, is known for its craftsmanship and innovation. Their HoneyDew Bourbon begins with Garrison Brothers’ award-winning Small Batch Straight Bourbon, which is then infused with Burleson’s Texas Wildflower Honey. Made in Hye, Texas, this bourbon is bottled at 80 proof (40% alcohol) and comes in a standard 750ml bottle.

To create its signature flavor, used bourbon barrel pieces are soaked in wildflower honey until they absorb the rich sweet essence. These honey-soaked oak cubes are then added to a tank with aged bourbon and left to rest for about seven months. The bourbon itself is aged for at least four years before the honey infusion, ensuring depth and smoothness.

The result is a bourbon that offers notes of golden Texas honey, elderberry syrup, peaches, apricots, and white chocolate. It’s smooth, light, and sweet with a rich honey finish that makes every sip satisfying. The idea for this unique creation came from Nancy Garrison, co-founder of the distillery. Made with a classic blend of corn, wheat, and malted barley, it’s perfect neat, on the rocks, or in cocktails like a Gold Rush. Technically a “finished” bourbon, HoneyDew captures the true taste of Texas craftsmanship.
