Harvest Spirits is based out of a New York State family apple farm. This Hudson Valley grower utilizes sustainable farming practices and traditional methods, making this a spirit that's great for Friday night drinks while supporting small agriculture. Each label is hand-numbered with the batch and bottle number, which is particularly worth noting with Core; the distiller often varies the apple composition of the cider with differing varieties. Batch 15, for example, is made with 100% Fuji apples, while some previous batches were made with Red Delicious, Golden Delicious, and varying blends.
But, most importantly, this stuff is just plain delicious. Using a custom-designed German still, Core is triple-distilled from fermented apple cider with only water added before bottling. While it's exceptionally clean and crisp, it maintains the character of all those apples that go into every bottle. The nose and palate are both light and fresh, with notes of orange blossom, vanilla, honeysuckle, and, of course, apple. One of the delights of this vodka is its delicious variability from batch to batch, and the bottle you receive may be different than the one pictured.
