Leblon Cachaça is produced at Destilaria Maison Leblon in Patos de Minas, in the western highlands of Minas Gerais, Brazil — the agricultural heartland of the country's cachaça tradition and the state most closely associated with the spirit's artisanal production. Cachaça, Brazil's national spirit and the third most-consumed distilled spirit in the world, predates rum by over a century and is distinguished from it by a foundational difference in raw material: where rum is distilled from molasses, a byproduct of sugar refining, cachaça is distilled directly from fresh-pressed sugarcane juice. That distinction places it in the same family as the French island agricoles of Martinique and Guadeloupe, though cachaça has evolved its own entirely separate cultural, technical, and sensory identity rooted in Brazilian tradition. Maison Leblon's sugarcane grows at over 1,000 feet in elevation, where cooler temperatures and lower atmospheric pressure slow the cane's maturation and concentrate its natural sweetness and aromatic character. Each stalk is hand-harvested with a machete and transported to the distillery within hours of cutting.

The pressing at Maison Leblon is deliberately restrained — unlike operations that maximize juice yield through high-force pressing, the distillery applies only gentle pressure to extract the clearest, sweetest juice from the center of the stalk. This selective extraction is the first step in a production philosophy modeled more on European winemaking than on industrial spirit production. The fresh caldo de cana is fermented using a proprietary process of approximately 15 to 24 hours before being transferred to traditional alambique copper pot stills for single-batch distillation — the same batch method used in Cognac and Scotch malt whisky production, and the technique that classifies Leblon as an artisanal rather than industrial cachaça. The distillate then rests for up to six months in vintage XO Cognac casks sourced from France, a finishing choice that frames the spirit's wild sugarcane character without displacing it. Multiple batches are then master-blended by distiller Gilles Merlet and his team before bottling at 40% ABV.

The nose is lively and distinctly cane-forward — fresh sugarcane, green grass, tinned sweetcorn, and a faint floral quality that the copper pot still distillation preserves alongside the raw material's natural aromatics. The palate is clean and medium-bodied, with a burst of sugarcane sweetness on entry giving way to a warming white pepper spice and a subtle earthiness that is characteristic of Minas Gerais cachaça. The finish is long and slightly grassy, closing on a clean, peppery fade that lingers with the directness and transparency of a spirit made to express its raw ingredient above all else. Built for the caipirinha, but expressive enough to reward sipping neat.
