From Little Pomona:
A New Leaf is our first foray into cider making techniques that aim to retain a small amount of natural apple sugars in the final cider. In this case we looked to Normandy, France for inspiration and a method called keeving. What we have in bottle now, is a fully sparkling, medium dry cider made with locally grown Bittersweet apples.
What to expect? Well, initially the sparkle counteracts the natural sweetness, but as it settles down, the cider begins to open up to reveal an evolving spectrum of flavours, aromas and sensations with each sip of the glass - white tea, peach, leather, baking spice, tobacco and much more.
It's a complex cider, a lovely match with ripe soft cheeses and great with everything on the barbecue.
