Lo Veras Mezcal Espadín Joven is an artisanal mezcal made in Santiago Matatlán, Oaxaca — traditionally roasted in a stone horno constructed of river rocks using pine wood for 3–5 days, milled with a horse-drawn tahona, open-air fermented for 15–20 days in pine tanks using only natural airborne yeasts, and double-distilled in a small copper still. The unaged Joven format lets the Espadín agave character shine through.
The river-rock stone horno is a particularly traditional roasting approach, distinct from the more common conical earthen pit ovens elsewhere in Oaxaca. The natural-yeast open-air fermentation in pine tanks lets the local microflora contribute to the final mezcal character, with the long 15–20 day fermentation cycle building structural complexity. Lo Veras’ Joven is carefully crafted to fill the glass with flavor without overpowering a cocktail.
