Los Javis Tobala Joven Mezcal is a premium Mezcal made from the exquisite Maguey Tobala in Santiago Matatlan, Oaxaca. Renowned for its delicate and floral notes, Tobala is a wild agave that grows in the rugged terrain of Oaxaca, making it a rare find. The production process is steeped in tradition, beginning with the careful roasting of the agave hearts in underground ovens, which enhances the natural flavors. Following this, the agave is crushed with a horse-drawn Tahona, allowing for the extraction of the sweet juices. Fermentation occurs with wild, open-air yeasts, enriching the flavor complexity.
