• All the vineyards are sustainably farmed and are up to 72 years old from the granitic soils of the Paardeberg
• Carefully hand harvested to respect the low juice-to-berry ratio inherent to the old vines

• Fermented with indigenous yeast, which lasted up to ten weeks, and any natural malolactic fermentation was allowed to take its course with lees aging
