Psagot Winery was founded in 2003 by Yaakov Berg on the peaks of the Jerusalem Mountains — Psagot means “summit” in Hebrew — at 750 metres elevation, where vines are planted directly into terraced soft limestone bedrock. During construction, Yaakov discovered a cave beneath the winery dating to the Second Temple period, complete with an ancient wine press and period coins — one of which is reproduced on every bottle, connecting each glass to over two thousand years of winemaking history on this land. The M Series denotes Mevushal — flash-pasteurized under strict kosher supervision — making it suitable for the widest range of kosher catering, restaurant, and event settings. At $29.99, it is one of Israel’s most compelling kosher Chardonnay values.

The wine opens with appealing aromas of pear, green apple, and tropical fruit, with a signature minerality drawn from the limestone bedrock terroir.
