This 33-year-old single cask, single grain from the North British distillery rested entirely in a refill Oloroso sherry butt before being bottled at a hefty 53.2% ABV by Signatory Vintage.
The cask influence is obvious, with notes of dried fruit, toasted nuttiness, and gentle spice, married with the distillery's clean, light spirit.
Nose: The cask influence is immediately apparent, with an intense wave of rum-soaked raisins and coconut.
Palate: Elegant soft, creamy mouthfeel. Flakey pastry and toffee - like a perfect raisin pie.
Finish: Long and balanced, dried dates on the back palate with oak spice lingering on the mid palate.
