The wine was fermented for a week at 85 degrees Fahrenheit and after settling and racking, was aged for approximately one year in a combination of new and used American oak tanks and casks. Unlike many California Cabernet Sauvignon producers, Sycamore Lane produces a smooth, easy drinking style of Cabernet designed to be enjoyable upon release. This red wine can be enjoyed now and makes an enjoyable accompaniment to roast chicken, steaks, roasts, lamb, game and mildly seasoned pastas.
