WLP400 produces high phenol expression with notes of clove, herbs, and spice balanced by light fruit esters, creating the unmistakable aroma and flavor profile associated with classic Belgian witbier. Its naturally low to medium flocculation helps maintain the traditional hazy appearance of the style while delivering a dry, refreshing finish that complements ingredients like coriander and orange peel.
This liquid ale yeast features low to medium flocculation, 74–78% attenuation, STA1 negative status, and 5–10% alcohol tolerance. It performs best between 67–74°F (19–23°C) and is packaged in White Labs' PurePitch® Next Generation pouch with approximately 150 billion cells for consistent fermentation performance and reliable pitching rates.
For best results, store refrigerated between 33–38°F and do not freeze. Pitch cold into well-oxygenated wort and ferment within the recommended temperature range. One pouch is suitable for most standard 5-gallon batches, while a yeast starter is recommended for higher-gravity beers or older yeast to maximize cell health and fermentation performance.
