Malting is a process familiar from single malt Scotch whisky and craft beer, but rare in American rye whiskey production. When grain is malted, it is steeped in water to begin germination, then kiln-dried to halt the process. This activates amylase enzymes that convert starches to fermentable sugars more efficiently, but more importantly for flavor, the malting process itself develops complex compounds in the grain that unmalted rye does not contain — floral, bready, and spice notes that become the foundation of the spirit rather than just a mash bill component. A 100% malted rye mashbill takes those characteristics to their full expression: no corn, no wheat, no unmalted grain — pure malted rye character from grain to glass.
